A new analysis of UK Biobank data suggests that not all ultra-processed foods may carry the same mental health risk. Researchers found that higher estimated exposure to certain markers of ultra-processed foods, including flavoring agents, coloring agents and sweeteners, was dose-dependently associated with a higher risk of incident depression.

The findings, published in the European Journal of Nutrition, come from a prospective study of 171,818 participants who completed at least one 24-hour dietary recall questionnaire. Over an average follow-up of 10.7 years, 5,424 incident depression cases were identified.

Three marker categories showed the clearest association

Among 10 marker categories and 39 specific markers examined, flavoring agents, coloring agents and sweeteners showed the strongest positive associations with depression risk. The study reported that, compared with modeled intake levels associated with the lowest depression risk, higher proportions of foods likely to contain flavorings, coloring agents and sweeteners were linked with 46%, 49% and 45% higher risks of incident depression, respectively.

Other marker categories did not show the same pattern. Protein source and fiber had a smaller, non-linear association with incident depression, while no significant associations were detected for flavor enhancer, processing aid, modified starch, varieties of sugar or modified oil.

Why the study matters for diet research

The authors said the work highlights a limitation in current ultra-processed food research: broad definitions can make it difficult to identify which components are most relevant to health outcomes. By focusing on predefined markers rather than ultra-processed foods as a single category, the study suggests that specific additives and ingredients may help explain previously observed links between diet quality and depression.

Researchers also noted that the study found a U-shaped association between overall ultra-processed food intake and depression risk, with the lowest modeled risk at about 16% of total food intake. However, they cautioned that this should not be interpreted as evidence that some ultra-processed foods are protective.

Because the analysis relied on self-reported dietary data and estimated marker exposure rather than direct ingredient lists, the authors said residual confounding and measurement error remain possible. They also said reverse causation cannot be fully excluded.

The study adds to a growing body of evidence examining how diet composition may relate to mental health, and it may encourage future research to look more closely at the specific additives and ingredients that distinguish ultra-processed foods from less processed options.
